		<description>Beets.  I came across the same study - but what you missed in your discussion is that it was the action of the bacteria in the saliva that played a key roll in conversion. Now, the though of beet juice replace OJ is just a bit out there. There is nothing magical about the beet juice - its not a blood pressure cure - and whole beets would have worked as well. The key is high nitrate vegetables - obviously chewed for the saliva interaction.

So instead of beet juice, a small serving of radishes (another food high in nitrates) should work just as well and be much more gastronomically appealing.</description>
